These gluten-free no-bake cookies are a quick, crowd-pleasing dessert that requires no oven! Packed with chocolatey flavor, oats, and nut butter, they’re simple to make and perfect for satisfying sweet cravings any time of day.

1/2 cup butter, dairy-free use Smart Balance, vegan use your favorite vegan butter
2 cups granulated sugar
1/2 cup milk, dairy-free and vegan use unsweetened almond or coconut milk
1/4 cup unsweetened cocoa powder
1/2 cup gluten-free creamy peanut butter, or your favorite nut or seed butter
1 tablespoon vanilla extract
1/4 teaspoon ground cinnamon
3 cups gluten-free quick-cooking oats

Instructions

Melt the butter in a medium saucepan over medium heat
Combine wet ingredients: Add sugar, milk, and cocoa powder. Bring to a boil, stirring constantly
Boil for about 1 minute, stirring continuously
Remove from heat and stir in peanut butter, vanilla extract, and cinnamon until smooth
Add gluten-free oats and stir until evenly coated
Drop spoonfuls of the mixture onto parchment paper
Cool and set completely at room temperature for 30 minutes

Notes

Store in an airtight container at room temperature for up to 5 days
Substitute oats with gluten-free rolled oats or seeds of choice
For added texture, mix in chocolate chips or chopped nuts
