Gluten-free graham cracker crust
8 ounces frozen or fresh strawberries (hulled and halved)
½ cup (100 g) granulated sugar
â…› teaspoon kosher salt
2 tablespoons (30 ml) cool water
1 tablespoon (8 g) unflavored powdered gelatin (use halal-certified or agar agar)
1 ½ cups (12 fluid ounces) chilled heavy whipping cream
2 tablespoons (14 g) confectioners’ sugar
8 ounces plain Greek-style yogurt (room temperature)

Instructions

Cook strawberries, ½ cup sugar, and ⅛ tsp salt in a saucepan over medium heat for 10 minutes until softened and juicy.
Sprinkle gelatin over 2 tbsp water and let sit 5 minutes until thickened.
Remove strawberry mixture from heat. Add bloomed gelatin and stir until dissolved. Cool slightly.
In a chilled bowl, whip cream with 2 tbsp confectioners’ sugar until stiff peaks form.
Fold in Greek yogurt and the cooled strawberry mixture until smooth.
Pour the mixture into a prepared gluten-free graham cracker crust.
Chill for at least 4 hours or until fully set (overnight optimal).
Serve with fresh strawberries or optional whipped cream.

Notes

Use halal-certified powdered gelatin or substitute with agar agar set.
Ensure all graham cracker crusts are certified gluten-free.
Adjust fruit type for seasonal variations (fresh or thawed frozen strawberries work well).
