4 boneless, skinless chicken breasts
Salt and pepper to taste
1/2 cup gluten-free breadcrumbs
1/4 cup grated Parmesan cheese
2 large eggs, beaten
1/2 cup all-purpose gluten-free flour
1/2 cup pesto (store-bought or homemade)
8 ounces fresh mozzarella cheese, sliced
Olive oil, for cooking

Instructions

Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper.
Set up three shallow dishes: one with gluten-free flour, one with beaten eggs, and one with gluten-free breadcrumbs + Parmesan.
Dredge each chicken breast in flour, dip in egg, then coat in breadcrumb mixture.
Heat olive oil in an oven-safe skillet over medium-high heat. Cook chicken 4-5 minutes per side until golden.
Spoon pesto over each chicken breast, top with mozzarella slices, and bake 8-10 minutes until cheese melts and chicken is cooked through.
