A quick gluten-free quiche with a buttery crust, sautéed veggies, eggs, half and half, cheese, and herbs. Perfect for busy dinners with customizable fillings.

Ingredients

½ batch gluten-free pie crust
2 tablespoons unsalted butter
½ cup white/yellow onion (diced)
1 tablespoon minced garlic
1 cup asparagus ends (diced)
1 green bell pepper (diced)
2 cups fresh spinach
5 large eggs
½ cup half and half
2 teaspoons fresh thyme
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried basil
1 ½ cups shredded cheese (sharp cheddar or preferred)
fresh chives/parsley (for garnish)

Instructions

Preheat oven to 350°F (175°C)
Prepare gluten-free crust and add to pie dish
Bake crust for 15 minutes
Melt butter in skillet, sauté onion for 3-4 minutes
Add garlic, bell pepper, and asparagus; cook 3-4 minutes
Add spinach and cook until wilted
Whisk eggs, half and half, spices, and thyme until blended
Fold in cooked veggies and cheese
Pour mixture into pre-baked crust
Bake 35-40 minutes until golden and set

Notes

Customize with any veggies/chesses
Use pre-made crust if time-limited
Chill leftovers in fridge (3 days)
