Ingredients

2 tablespoons avocado oil
1/2 cup diced onion
1 red bell pepper, diced
1 orange bell pepper, diced
2 stalks celery, thinly sliced
2 medium carrots, thinly sliced
1 cup sliced mushrooms
2 heaping cups broccoli florets
1 cup sugar snap or snow peas
2 cloves garlic, chopped
1/22/3 cup gluten-free tamari stir fry sauce (e.g., with rice vinegar and agave)

Instructions

Prep all veggies and chop garlic
Heat avocado oil in skillet/wok over medium-high heat
Add onions, sauté 3-4 minutes until translucent
Add bell peppers, celery, and carrots; stir fry 3-4 minutes
Add mushrooms and broccoli; cook 3-4 minutes with frequent stirring
Toss in garlic and sugar snap peas, cook 1 minute
Pour in tamari based sauce, stir-fry 2 minutes until slightly thickened

Notes
