1½ cups (180 g) sliced English cucumber
½ cup (50 g) red onion, thinly sliced
¼ cup (8 g) basil leaves, ribbons
6 ounces (170 g) feta cheese, crumbled or cubed
2 tablespoons (28 g) extra-virgin olive oil
1 tablespoon (15 g) lemon juice, freshly squeezed
½ teaspoon flaky sea salt (Maldon)
1 tablespoon (15 g) balsamic glaze (ensure gluten-free label)

Instructions

Dice watermelon into bite-sized cubes and place in a large bowl
Thinly slice cucumber and red onion; add to the bowl
Roughly chop or ribbon basil leaves and mix in
Crumble or cube feta cheese and combine with the salad
In a small bowl, whisk olive oil, lemon juice, and sea salt into a dressing
Pour dressing over the salad and gently toss to avoid crushing watermelon
Before serving, drizzle with balsamic glaze for added tang
