  • 8 celery stalks, thinly sliced on a diagonal
  • 1/2 cup dried cranberries
  • 1/2 cup whole roasted, salted almonds
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons finely chopped fresh parsley
  • 1 teaspoon lemon zest
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Wash and dry the celery stalks. Slice them thinly on a diagonal. Chop the tender leaves from the heart of the bunch. Add the sliced celery and leaves to a mixing bowl.
  • To the bowl, add the dried cranberries, whole almonds, grated Parmesan, parsley, and lemon zest.
  • In a small bowl or jar, combine the olive oil, fresh lemon juice, salt, and pepper. Whisk vigorously or shake the jar until the dressing is well-emulsified.
  • Pour the dressing over the celery mixture. Toss everything together until evenly coated. Taste and adjust seasoning if needed.
