1 ½ cups (225 g) gluten-free graham cracker crumbs
6 tablespoons (84 g) unsalted butter, melted
1 ¼ cups (10 fl oz) heavy whipping cream
5/8 cup (5 fl oz) key lime juice (or 50/50 lime-lemon juice)
1 tbsp unflavored powdered gelatin
2 tsp freshly grated lime zest
14 oz sweetened condensed milk
Chilled chocolate fudge frosting (optional)
Extra lime zest or whipped cream (optional)

Instructions

Prepare the crust: Combine gluten-free graham cracker crumbs and melted butter until moistened. Press firmly into a 9-inch springform pie tin.
Chill for 15 minutes.
Prepare filling: In a large bowl, whisk gelatin with 2 tbsp key lime juice until dissolved.
Add chilled heavy cream, remaining key lime juice, and sweetened condensed milk. Mix until smooth and well blended.
Fold in lime zest, then gently spoon into chilled crust.
Chill pie for at least 1 hour before serving.
Garnish with chocolate fudge frosting, whipped cream, or lime zest if desired.

Use fresh key lime juice for authentic flavor.
Chill completely before slicing.
