- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh shelled peas (or frozen peas, thawed)
- 4 cups vegetable broth
- 1/4 cup fresh mint leaves
- Salt to taste
- Freshly ground black pepper to taste
- 1/2 cup heavy cream or plain yogurt (optional, for serving)
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
- Add the fresh peas and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the peas are tender.
- Remove the pot from the heat and stir in the fresh mint leaves.
- Carefully puree the soup using an immersion blender right in the pot, or transfer it in batches to a stand blender until completely smooth.
- Season generously with salt and pepper. If the soup is too thick, you can thin it with a little more broth or water until it reaches your desired consistency.
- Ladle into bowls. For a little extra indulgence, swirl in a spoonful of cream or a dollop of yogurt before serving.
