  • 2 tablespoons butter or olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh shelled peas (or frozen peas, thawed)
  • 4 cups vegetable broth
  • 1/4 cup fresh mint leaves
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/2 cup heavy cream or plain yogurt (optional, for serving)

Instructions

  • In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  • Add the fresh peas and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the peas are tender.
  • Remove the pot from the heat and stir in the fresh mint leaves.
  • Carefully puree the soup using an immersion blender right in the pot, or transfer it in batches to a stand blender until completely smooth.
  • Season generously with salt and pepper. If the soup is too thick, you can thin it with a little more broth or water until it reaches your desired consistency.
  • Ladle into bowls. For a little extra indulgence, swirl in a spoonful of cream or a dollop of yogurt before serving.
