  • Instructions

  • Preheat and Prep: Start by preheating your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  • Cream the Wet Ingredients: In a large bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2-3 minutes with an electric mixer. Beat in the egg and vanilla extract until everything is well combined.
  • Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  • Bring the Dough Together: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix! The dough will be soft and a bit sticky.
  • Form the Cookies: Scoop about 1.5 tablespoons of dough for each cookie, roll it into a ball, and place it on the prepared baking sheet. Gently flatten each ball with the palm of your hand or the bottom of a glass until it’s about ½-inch thick.
