1.5 cups GF flour blend with xanthan gum
1/8 teaspoon fine sea salt
8 tablespoons unsalted butter, cold
1 large egg, room temperature
2 teaspoons lemon juice, divided
1/4 cup ice cold water
2 cups plums, pitted and sliced
3 tablespoons brown sugar
2 teaspoons cornstarch

Instructions

Whisk gluten-free flour and salt together in a large bowl.
Cut cold butter into the flour using a pastry blender until the mixture forms coarse crumbs.
Whisk 1 teaspoon lemon juice, water, and egg together in a small bowl.
Combine liquid with flour, mixing until the dough holds together.
Chill the dough for at least 30 minutes before rolling out.
Preheat oven to 375°F (190°C).
In a bowl, toss sliced plums with the remaining 1 teaspoon of lemon juice, brown sugar, and cornstarch.
Roll the chilled dough into a circle on parchment paper.
Arrange plums in the center of the dough, leaving a 2-inch border.
Fold the edges of the dough over the plums, leaving the center exposed.
Bake for 30 minutes or until the crust is golden and the plum filling is bubbling.

Notes

Ensure the butter remains very cold during the mixing process for a flaky crust. Arrowroot powder may be used as a substitute for cornstarch if preferred. This recipe is naturally gluten-free; ensure all ingredients used are certified gluten-free if you have severe allergies.
