  • 1 tsp cornstarch
  • 1 egg, beaten (for egg wash)

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a medium bowl, toss the diced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until everything is evenly coated.
  • On a lightly floured surface (use gluten-free flour!), roll out your pastry dough into a large rectangle. Cut it into 4 or 6 smaller squares.
  • Spoon a generous amount of the apple mixture onto one half of each square, leaving a border around the edge. Brush the edges with a little water, then fold the dough over to create a triangle. Use a fork to crimp the edges tightly, sealing in all that goodness.
  • Place the turnovers on the prepared baking sheet. Brush the tops with the beaten egg and sprinkle with coarse sugar if desired. Bake for 18-22 minutes, or until they are puffed up and a beautiful deep golden brown.
