Layers of tender gluten-free beef lasagne sheets, rich bolognese with carrots and beans, and creamy cheesy sauce. A family-friendly, 60-minute comfort meal sure to impress.

Ingredients

Scale

1 teaspoon olive oil
1 large onion, finely chopped
1 clove garlic, finely chopped
500g minced beef
400g chopped canned tomatoes
2 large carrots, grated
2 tablespoons tomato puree
Few sprigs fresh thyme (or 1 tsp dried)
Salt and pepper
cornflour (2 teaspoons sauce & 3 teaspoons white sauce)
400g canned haricot beans, drained
810 gluten free lasagne sheets
3 tablespoons cornflour (white sauce)
450ml milk
Grated nutmeg (or ¼ tsp ground)
75g mature cheddar, grated

Instructions

Heat oven to 190°C (170°C fan). Add olive oil to a large pan
Fry onion over medium heat for 5 minutes until softened
Add beef and garlic; cook 5 minutes until browned
Mix in tomatoes, tomato puree, grated carrots, herbs, salt, pepper. Simmer 15 minutes
Stir 2 tsp cornflour into 2 tbsp cold water, add to sauce and cook until thickened
Stir in drained haricot beans
In white saucepan, whisk 3 tsp cornflour into 450ml milk until smooth
Cook over low heat 2-3 minutes until thickened, season with nutmeg, salt and pepper
Layer lasagne sheets in baking dish, alternating with bolognese, white sauce, and cheddar cheese
Repeat layers, finishing with top layer of sauce and cheese
Bake 25-30 minutes until golden brown

Notes

Use zucchini or spinach as vegetable alternatives
Test assembled layers are level to ensure even baking
Leftovers freeze well for up to 3 months
Use any canned beans available (kidney or borlotti work well)
