  • 1/2 cup cooked, peeled, and pureed beets (about 1 medium beet)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 tablespoon sesame seeds or poppy seeds for topping (optional)
  • Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, combine the almond flour, beet puree, olive oil, salt, and garlic powder. Mix until a smooth, slightly sticky dough forms. If it’s too wet, add a touch more almond flour.
  • Place the dough between two sheets of parchment paper. Roll it out as thinly and evenly as possible to about 1/8-inch thick.
  • Remove the top layer of parchment. Use a pizza cutter or a sharp knife to score the dough into squares or rectangles. Sprinkle with seeds if using.
  • Carefully slide the parchment paper with the scored dough onto your prepared baking sheet. Bake for 15-20 minutes, or until the edges are just starting to brown and the crackers are firm.
  • Let the crackers cool completely on the baking sheet before breaking them apart along the scored lines.
