- 1 pound ground beef
- 1 yellow onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 4 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large Dutch oven or soup pot, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it’s nicely browned. Drain off any excess grease.
- Add the diced onion and bell pepper to the pot with the beef. Sauté for about 5 minutes, until the vegetables begin to soften. Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the black beans, pinto beans, corn, diced tomatoes, diced tomatoes with green chilies, and beef broth.
- Sprinkle in the chili powder, cumin, paprika, and a good pinch of salt and pepper. Give everything a big stir to combine.
- Bring the soup to a boil, then reduce the heat to low and let it simmer, uncovered, for at least 20-25 minutes.
- Give it a taste and adjust the seasonings if needed. Ladle into bowls and top with your favorite fixings.
