2 large Chicken Breasts
1/2 cup Gluten Free All-Purpose Flour
2 large Eggs
1 cup Gluten Free Panko Breadcrumbs
1/2 cup Grated Parmesan Cheese
1 tsp Italian Seasoning
1/2 tsp Salt
3 tbsp Olive Oil
1 cup Marinara Sauce
1 cup Shredded Mozzarella Cheese

Instructions

Slice chicken breasts horizontally into four cutlets.
Prepare three shallow bowls: first with gluten-free flour, second with whisked eggs, third with gluten-free panko, Parmesan, Italian seasoning, and salt.
Dredge each cutlet in flour, then dip in eggs, and press into the breadcrumb mixture.
Heat olive oil in a skillet and fry cutlets 4-5 minutes per side until golden.
Transfer to a baking sheet and spoon marinara sauce over each cutlet.
Top with shredded mozzarella cheese.
Broil oven for 2-3 minutes until cheese is melted and bubbly.
Serve with gluten-free pasta or zucchini noodles and a fresh salad.
