A quick and customizable gluten-free lasagna with layered Italian flavors. Packed with tender noodles, savory sausage, zesty fire-roasted tomatoes, and melted mozzarella. Perfect for family meals without sacrificing comfort.

9 ounce package gluten-free lasagna noodles
1 pound ground Italian sausage
1 onion, finely diced (about 2.5 cups)
2 cloves garlic, minced
1 tbsp Italian seasoning
56 ounces canned fire-roasted tomatoes (228 ounce cans)
1 tsp sea salt
1/2 tsp black pepper
15 ounces ricotta cheese, full fat
2 eggs
1 cup grated Parmesan cheese
5 cups grated mozzarella cheese
12 teaspoons chopped fresh parsley or basil (for garnish)
Nonstick cooking spray or olive oil (for baking dish)

Instructions

Preheat oven to 375°F (190°C)
Brown ground Italian sausage in a large pan over medium-high heat until cooked through
Remove sausage from pan and set aside
Cook diced onion and minced garlic in same pan until translucent and lightly browned
Return cooked sausage to pan, add Italian seasoning, fire-roasted tomatoes, sea salt, and black pepper
Bring mixture to boil, then simmer for 10 minutes while flavors meld
In a separate bowl, combine ricotta, eggs, and 1/4 cup Parmesan into a smooth mixture
Layer noodles, meat sauce, and ricotta mixture in a greased 9×13-inch baking dish
Repeat layers ending with a top layer of meat sauce and mozzarella
Bake for 25 minutes until bubbly and browned on top
Let rest for 5-10 minutes before slicing
Garnish with fresh parsley or basil

Notes

For halal option, substitute Italian sausage with ground beef or halal-certified meat
Gluten-free noodles are best when pre-cooked according to package instructions
Pasta sauce can be added to the tomato mixture for extra flavor
Use parchment paper to prevent noodles from sticking to the dish
