For the Crust:
1 ½ cups almond flour
¼ cup coconut flour

¼ teaspoon salt
â…“ cup melted coconut oil
1 teaspoon vanilla extract
For the Lemon Filling:
3 large eggs
â…” cup fresh lemon juice
¾ cup granulated sugar
2 lemons, zested
3 tablespoons gluten-free all-purpose flour
Powdered sugar, for dusting
Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
Whisk almond flour, coconut flour, coconut sugar, and salt for the crust. Add melted coconut oil and vanilla. Mix into a crumbly dough.
Press dough firmly into the prepared pan. Bake for 12-15 minutes until edges are golden.
Whisk eggs, lemon juice, sugar, lemon zest, and flour for the filling until smooth.
Pour the filling over the hot crust. Return to the oven and bake for 18-20 minutes until set.
Cool completely in the pan on a wire rack, then refrigerate for at least 2 hours or overnight.
Lift bars from the pan using parchment. Dust with powdered sugar, slice, and serve.
