  • 2 lemons, zested
  • 3 tablespoons gluten-free all-purpose flour
  • Powdered sugar, for dusting
  • Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  • Whisk almond flour, coconut flour, coconut sugar, and salt for the crust. Add melted coconut oil and vanilla. Mix into a crumbly dough.
  • Press dough firmly into the prepared pan. Bake for 12-15 minutes until edges are golden.
  • Whisk eggs, lemon juice, sugar, lemon zest, and flour for the filling until smooth.
  • Pour the filling over the hot crust. Return to the oven and bake for 18-20 minutes until set.
  • Cool completely in the pan on a wire rack, then refrigerate for at least 2 hours or overnight.
  • Lift bars from the pan using parchment. Dust with powdered sugar, slice, and serve.
