- 1 cup whole milk plain Greek yogurt
- 1 large egg
- 1 cup shredded mozzarella cheese
- 1/2 cup mini pepperoni
- 1/4 cup pizza sauce
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together your gluten-free flour, baking powder, salt, and Italian seasoning.
- In a separate smaller bowl, beat the egg lightly and then mix it with the Greek yogurt until smooth.
- Pour the wet yogurt mixture into the dry ingredients. Use a fork or spatula to combine into a shaggy dough.
- Gently fold in the shredded mozzarella and mini pepperoni.
- Scoop out about 1.5 tablespoons of dough for each bite, rolling them gently into balls. Place them on the baking sheet and top with extra pepperoni.
