  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp dried Italian seasoning
  • 1 cup whole milk plain Greek yogurt
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni
  • 1/4 cup pizza sauce

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together your gluten-free flour, baking powder, salt, and Italian seasoning.
  • In a separate smaller bowl, beat the egg lightly and then mix it with the Greek yogurt until smooth.
  • Pour the wet yogurt mixture into the dry ingredients. Use a fork or spatula to combine into a shaggy dough.
  • Gently fold in the shredded mozzarella and mini pepperoni.
  • Scoop out about 1.5 tablespoons of dough for each bite, rolling them gently into balls. Place them on the baking sheet and top with extra pepperoni.
  • Bake for 20-25 minutes, or until golden brown and firm to the touch.
  • Let cool for a minute, then serve warm with pizza sauce for dipping.
