  • 1 (14-16 oz) loaf gluten-free bread, cut into ¾-inch cubes
  • 6 tablespoons unsalted butter
  • 1 large yellow onion, finely diced
  • 45 celery stalks, finely diced
  • 3 cloves garlic, minced
  • 2 teaspoons fresh chopped sage
  • 1 tablespoon fresh chopped rosemary
  • 1 tablespoon fresh thyme leaves
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • 2 ½ cups gluten-free chicken or vegetable broth
  • 2 large eggs, lightly beaten

Instructions

  • Prep the Bread: Preheat oven to 300°F (150°C). Spread bread cubes on a baking sheet and toast for 15-20 minutes to dry them out. Increase oven temperature to 375°F (190°C) and grease a 9×13 inch baking dish.
  • Sauté the Aromatics: In a large skillet, melt butter over medium heat. Add onion and celery and cook for 8-10 minutes until softened. Stir in garlic, sage, rosemary, thyme, salt, and pepper; cook for 1 more minute.
  • Combine the Mixture: In a large bowl, combine toasted bread cubes with the sautéed vegetable and herb mixture. Pour in broth and beaten eggs. Gently toss until bread is evenly moistened.
  • Bake to Perfection: Transfer mixture to the prepared baking dish and spread evenly. Cover tightly with aluminum foil.
  • Bake at 375°F for 30 minutes covered. Remove foil and bake for another 20-25 minutes, until top is golden brown and crisp.
  • Serve and Enjoy: Let the stuffing rest for 5-10 minutes before serving to allow it to set.
