1 lb boneless, skinless chicken breast, pounded to 1/2–3/4″ thickness
Zest of 1 lime (about 2 tsp)
Juice of 2 limes (about 4 Tbsp fresh lime juice)
3 Tbsp honey
1 Tbsp olive oil or avocado oil
1 clove garlic, finely minced
1/2 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
Optional: 2–4 Tbsp minced fresh cilantro
Corn tortillas
Sliced avocado
Honey lime slaw, cabbage, or shredded lettuce
Black beans or pinto beans
Salsa (red, green, or mango)
Additional oil for cooking
Pound chicken breasts between plastic wrap to even 1/2–3/4″ thickness
In a bowl, whisk lime zest, juice, honey, oil, garlic, salt, pepper, and chili powder
Place chicken in a dish or Ziploc bag, pour marinade over and coat evenly
Marinate 15 minutes (up to 1 hour in fridge)
Heat skillet or grill to medium-high heat. Cook chicken 3–4 minutes per side until fully cooked
Optionally brush with additional glaze (2 Tbsp honey + 2 Tbsp lime juice if using)
