1 (8-ounce) package cream cheese, softened
½ cup plain Greek yogurt
1 tablespoon red wine vinegar
1 teaspoon dried oregano
¼ teaspoon garlic powder
Salt and freshly ground black pepper, to taste
4 large (10-inch) flour tortillas
1 cup chopped romaine lettuce
1 cup halved cherry tomatoes
½ cup diced cucumber
â…“ cup diced red onion
â…“ cup chopped Kalamata olives
¾ cup crumbled feta cheese
Instructions
Make the herbed spread by combining softened cream cheese, Greek yogurt, red wine vinegar, dried oregano, and garlic powder in a medium bowl. Season with salt and pepper. Beat until smooth and well-combined.
Lay one tortilla flat on a cutting board. Spread an even layer of the cream cheese mixture over the entire surface, going all the way to the edges.
Evenly sprinkle the chopped romaine, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese over the tortilla, leaving a half-inch border around the edges.
Starting at the bottom, tightly roll the tortilla up into a log. Place it seam-side down on a plate. Repeat with the remaining tortillas and filling.
Wrap each log tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
Unwrap the tortilla logs and use a sharp serrated knife to slice them into 1-inch thick pinwheels. Arrange on a platter and serve.
