450 g ground beef
55 g gluten-free white bread (about 1 ½ slices), grated
½ onion, grated
3 garlic cloves, grated
¼ cup BBQ sauce (alcohol-free)
2 teaspoons Italian seasoning
1 tablespoon fresh dill, chopped
¼ teaspoon salt
25 green olives, pitted

Instructions

Grate the onion and gluten-free bread until finely chopped.
Combine ground beef, grated onions, bread, garlic, BBQ sauce, Italian seasoning, dill, and salt in a bowl. Mix gently with hands until just combined.
Shape 2 tbsp of mixture into a ball, flatten, insert 1 olive, and roll tightly to seal.
Place on a parchment-lined tray and refrigerate 2 hours or freeze 15 minutes to firm.
Cook in a preheated 360°F (182°C) air fryer for 15 minutes in a single layer, or bake at 375°F (190°C) for 25 minutes, flipping halfway.

Notes

Use a homemade alcohol-free BBQ sauce if store-bought options contain alcohol.
Chilling meatballs prevents them from falling apart during cooking.
