Easy & delicious kale Caesar pasta salad recipe. Made with fresh kale, creamy Caesar dressing & pasta. Perfect side dish for potlucks & summer BBQs.

Ingredients

  • 8 oz pasta (like fusilli, rotini, or bowtie)
  • 1 large bunch of kale, stems removed and leaves torn
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup mayonnaise
  • 2 tbsp fresh lemon juice
  • 2 anchovy fillets, minced (or 1 tsp anchovy paste)
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • Salt to taste
  • Freshly ground black pepper to taste
  • Croutons for serving (optional)
  • A drizzle of olive oil for massaging kale
  • Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook your pasta according to the package directions until it's al dente. Drain it and let it cool slightly.
  • Massage the Kale: Place your torn kale leaves in a large bowl. Drizzle with a tiny bit of olive oil and a pinch of salt. Massage the kale with your hands for a minute or two until it becomes darker in color and softer to the touch.
  • Whisk the Dressing: In a small bowl, whisk together the mayonnaise, lemon juice, minced anchovies, garlic, Dijon mustard, and half of the Parmesan cheese. Season with black pepper.
  • Combine Everything: Add the slightly cooled pasta to the bowl with the massaged kale. Pour the creamy Caesar dressing over the top and toss everything together until it's beautifully coated.
  • Serve it Up: Transfer your salad to a serving platter. Top with the remaining Parmesan cheese and a generous handful of crunchy croutons.
