Instructions

Pour the hot cream over the chocolate and let it sit for 2-3 minutes to soften. Gently whisk until the chocolate is completely melted and the mixture is smooth and glossy.
  • Whisk in the room-temperature butter, lemon zest, and fresh lemon juice until everything is fully incorporated.
  • Stir in the finely crushed vanilla wafers or graham crackers. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm enough to handle.
  • Place the powdered sugar in a shallow bowl. Using a small cookie scoop or a teaspoon, scoop out portions of the chilled mixture and quickly roll them into 1-inch balls between your palms. A light dusting of powdered sugar on your hands can help with sticking.
  • Roll each ball in the powdered sugar until lightly coated. Place the finished truffles on a parchment-lined baking sheet and chill for another 30 minutes to set completely before serving.
