Rich, fudgy gluten-free brownies made in one bowl with melted chocolate, butter, and eggs. Perfect for a quick dessert or sweet craving.

11 tablespoons (150g) unsalted butter
3.5 ounces (100g) dark chocolate, broken into pieces
6.5 ounces (185g) dark brown sugar
3 large eggs
1 large egg yolk
1 teaspoon vanilla essence
1 ounce (30g) cocoa powder
½ teaspoon baking powder
1 teaspoon salt
2.3 ounces (65g) gluten-free flour
3.3 ounces (95g) chocolate chips

Instructions

Preheat oven to 350°F (180°C). Line an 8×8-inch square baking pan with baking paper and lightly grease.
Melt butter and chocolate in a large bowl in the microwave (1.5-2.5 minutes), stirring until smooth.
Add sugar and stir until combined.
Cool slightly, then whisk eggs and yolk, then stir into chocolate mixture.
Fold in vanilla, cocoa powder, baking powder, salt, gluten-free flour, and chocolate chips until just combined.
Pour batter into prepared pan. Smooth surface and bake for 25-30 minutes until edges are set.
Let cool completely before cutting into squares.

Notes

Use a gluten-free flour blend containing xanthan gum for best texture. Store in an airtight container for up to 5 days.
Ensure chocolate and chocolate chips are dairy-free if needed.
For halal/non-dairy: Replace butter with unsalted vegan butter.
