Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line it with parchment paper, leaving some overhang for easy removal.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground ginger. Stir in the orange zest, making sure it’s evenly distributed and doesn’t clump.
  • In a separate, larger bowl, cream the softened butter and honey together until the mixture is light and fluffy.
  • Beat in the eggs, one at a time, followed by the Greek yogurt. The mixture might look a little curdled at this point—it will come together.
  • Gently add the dry ingredients to the wet ingredients in two batches, alternating with the fresh orange juice. Mix until just combined. Do not overmix.
  • Pour the batter into your prepared loaf pan and smooth out the top. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for about 15 minutes before using the parchment paper to lift it out onto a wire rack to cool completely.
