  • 1/3 cup whole milk
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cups fresh spinach
  • 1 cup shredded cheese, divided
  • Salt and black pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C). In a large bowl, whisk the eggs, milk, half of the cheese, a good pinch of salt, and a few grinds of black pepper until well combined and a little frothy.
  • Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5-7 minutes. Add the spinach and cook until wilted, about 1 minute.
  • Pour the egg mixture evenly over the veggies in the hot skillet. Let it cook without stirring for 4-5 minutes, until the edges start to set.
  • Sprinkle the remaining cheese over the top. Carefully transfer the skillet to the preheated oven and bake for 15-18 minutes, until the center is set and the top is golden brown.
  • Let the frittata cool in the pan for a few minutes before slicing into wedges.
