  • 2 large eggs
  • 0.5 cup vegetable oil

  • 0.5 cup all-purpose flour
  • 0.5 cup powdered sugar

Instructions

  • Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  • In a large bowl, combine the red velvet cake mix, eggs, vegetable oil, and vanilla extract. Mix until a thick, cohesive dough forms.
  • Place powdered sugar in a small bowl. Portion dough into balls (about 1.5 tablespoons each) and roll them in the powdered sugar until generously coated.
  • Place dough balls 2 inches apart on the prepared baking sheets. Bake for 9-11 minutes, until edges are set and tops are cracked.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
