1 large yellow onion, diced
1 bell pepper (any color), diced
3 cloves garlic, minced
1 lb lean ground turkey or beef
1 tbsp ground cumin
2 tbsp chili powder
1 tsp dried oregano
1 (15 oz) can pure pumpkin puree
1 (14.5 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 cup chicken or vegetable broth
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
Salt and black pepper to taste
Heat olive oil in a large Dutch oven or pot over medium-high heat. Add diced onion and bell pepper. Cook for 5 minutes until softened.
