  • 1 large yellow onion, diced
  • 1 bell pepper (any color), diced
  • 3 cloves garlic, minced
  • 1 lb lean ground turkey or beef
  • 1 tbsp ground cumin
  • 2 tbsp chili powder
  • 1 tsp dried oregano
  • 1 (15 oz) can pure pumpkin puree
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 cup chicken or vegetable broth
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • Salt and black pepper to taste

  • Heat olive oil in a large Dutch oven or pot over medium-high heat. Add diced onion and bell pepper. Cook for 5 minutes until softened.
  • Add ground turkey or beef. Break it up with a spoon and cook until no longer pink.
  • Add minced garlic, cumin, chili powder, and oregano. Stir constantly for 1 minute until fragrant.
  • Pour in diced tomatoes, tomato sauce, pumpkin puree, and broth. Stir until the pumpkin is fully incorporated.
  • Add the drained and rinsed kidney beans and black beans. Stir to combine.
  • Bring the chili to a boil, then reduce heat to low. Cover and simmer for at least 30 minutes.
  • Season with salt and black pepper to taste. Serve hot with desired toppings.
