  • 1 cup crushed crackers (like Ritz or saltines)
  • 4 tbsp butter, melted
  • Salt and black pepper to taste

  • Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
  • Bring a large pot of salted water to a boil. Add the sliced squash and chopped onion and cook for about 5-7 minutes, until just tender. Drain well in a colander.
  • In a large mixing bowl, combine the drained squash and onion with the sour cream, condensed soup, and half of the shredded cheddar cheese. Season generously with salt and pepper. Stir until everything is evenly combined.
