3 cups gluten-free cornflakes
1/2 teaspoon paprika
1/2 teaspoon sea salt
1/4 cup Dijon mustard
2 eggs
1 pound boneless, skinless chicken breast, cut into strips

Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a small food processor, pulse the cornflakes, salt, and paprika until finely ground. Transfer the mixture to a shallow bowl.
In a second shallow bowl, whisk the eggs until smooth.
In a large mixing bowl, combine the Dijon mustard and chicken strips. Toss until well coated.
Dredge each chicken strip in the cornflake mixture, shaking off excess, then dip in the beaten egg and press back into the cornflakes for a double coating.
Arrange the coated chicken tenders on the prepared baking sheet in an even layer.
Bake for 15 to 20 minutes, or until golden brown and crispy.
Allow the tenders to cool slightly on the baking sheet before serving.
Serve with your favorite dipping sauces such as ketchup, mustard, or mayonnaise.

Notes

Make sure the cornflakes are finely ground to achieve the best crispy coating.
